Ingredients:

Chili Con Carne

  • 2 tbsp olive oil
  • 2 large onions, finely diced
  • 4 garlic cloves, minced
  • 2 red peppers, chopped
  • 1kg Welsh beef mince
  • 2 cans (400g each) chopped tomatoes
  • 2 tbsp tomato puree
  • 2 cans (400g each) kidney beans, drained and rinsed
  • 2 beef stock cubes
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp chili powder (adjust for desired spice level)
  • Salt and pepper to taste

White Rice

  • 600g white rice
  • Water for boiling

Instructions:

  1. Prepare Ingredients: Dice the onions, mince the garlic, and chop the red peppers. Rinse and drain the kidney beans.

  2. Cook the Aromatics: Heat the olive oil in a large, deep pan over medium heat. Add the diced onions and cook until softened (about 5 minutes). Add the minced garlic and cook for another minute.

  3. Add Peppers and Beef: Add the red peppers, cooking for 2–3 minutes. Add the beef mince, breaking it up with a spoon, and cook until browned.

  4. Season: Add cumin, coriander, and chili powder. Stir to coat the mince evenly. Season with salt and pepper.

  5. Add Tomatoes and Tomato Puree: Stir in tomato puree, then add the chopped tomatoes. Mix well.

  6. Add Stock and Simmer: Crumble in beef stock cubes, then add a splash of water (about 200ml). Bring to a simmer, then reduce the heat and let cook uncovered for 45 minutes, stirring occasionally. Add more water if needed.

  7. Add Kidney Beans: Add kidney beans, stirring through, and cook for another 10 minutes.

  8. Prepare Rice: Rinse 600g of rice under cold water. In a pot, add rice with twice the amount of water. Boil, then cover and simmer for 10–12 minutes. Drain any excess water.

  9. Serve: Spoon rice onto plates or into bowls, ladle chili con carne on top, and garnish with fresh coriander if desired.
