White Rice
- 600g white rice
- Water for boiling
Instructions:
-
Prepare Ingredients: Dice the onions, mince the garlic, and chop the red peppers. Rinse and drain the kidney beans.
-
Cook the Aromatics: Heat the olive oil in a large, deep pan over medium heat. Add the diced onions and cook until softened (about 5 minutes). Add the minced garlic and cook for another minute.

Add Peppers and Beef: Add the red peppers, cooking for 2β3 minutes. Add the beef mince, breaking it up with a spoon, and cook until browned.

Season: Add cumin, coriander, and chili powder. Stir to coat the mince evenly. Season with salt and pepper.
-
Add Tomatoes and Tomato Puree: Stir in tomato puree, then add the chopped tomatoes. Mix well.
-
Add Stock and Simmer: Crumble in beef stock cubes, then add a splash of water (about 200ml). Bring to a simmer, then reduce the heat and let cook uncovered for 45 minutes, stirring occasionally. Add more water if needed.
-
Add Kidney Beans: Add kidney beans, stirring through, and cook for another 10 minutes.
-
Prepare Rice: Rinse 600g of rice under cold water. In a pot, add rice with twice the amount of water. Boil, then cover and simmer for 10β12 minutes. Drain any excess water.
-
